What Momo Kombucha Is Doing Differently
Firstly, let’s start with what kombucha is. Kombucha is essentially a fermented tea made from four key ingredients: water, sugar, tea, and a bacterial culture called a SCOBY (symbiotic culture of bacteria and yeast).
Kombucha has become increasingly popular, and not without reason. As many people become more health-conscious, kombucha offers a lower-sugar alternative to sodas. Its fermented nature is also associated with gut health benefits.
The Kombucha Making Process
The kombucha making process consists of fermenting sweetened tea using a SCOBY. During fermentation, yeast in the SCOBY consumes the sugar and converts it into alcohol. Bacteria then convert that alcohol into organic acids, such as acetic acid. A cellulose pellicle forms on the surface and is removed once fermentation is complete. This process typically takes between seven and fourteen days.
What Does Kombucha Taste Like?
The best way to describe kombucha is that it has a tangy, fizzy, and slightly sour flavour. MOMO offers four bold flavours: Ginger-Lemon, Raspberry-Hibiscus, Elderflower, and Turmeric. All four flavours pass the taste test, with Raspberry-Hibiscus taking first place.
Ingredients Breakdown
Let’s take a look at the ingredients of my personal favourite MOMO flavour: Raspberry-Hibiscus.
The ingredients are as follows: filtered water, kombucha culture, organic raw cane sugar, organic raspberry juice, organic tea, and organic hibiscus.
After inspecting other kombucha brands, many include flavour enhancers, artificial sweeteners, or additives. In contrast, MOMO uses only organic ingredients, which is a bold and pioneering choice. (Read our previous article on organic vs non-organic.)
Not only does MOMO use exclusively organic ingredients, but it also brews and stores its kombucha in glass bottles. This eliminates plastic contact during the brewing and storage process, which reflects the brand’s strong focus on customer health.
Additionally, MOMO uses loose tea leaves rather than tea bags. This is significant, as some studies suggest that certain tea bags can release microplastics when steeped.
Kombucha Health Benefits
With health consciousness on the rise, many consumers are choosing kombucha over fizzy drinks due to its lower sugar content and perceived health benefits. Kombucha supports gut health through fermentation, as the live cultures in the SCOBY may aid digestion.
During fermentation, organic acids are produced, which are often associated with supporting the liver’s natural detoxification processes.
It’s important to note that not all kombucha is made the same. Some commercially produced kombuchas are pasteurised or heavily filtered, which removes live cultures and reduces gut health benefits. MOMO kombucha retains live cultures.
Kombucha also contains antioxidants, as well as vitamins and minerals such as vitamin C and B vitamins, which are essential for overall health.
What Makes MOMO Different
MOMO produces chilled kombucha, which is the more traditional and authentic method. This means it is unfiltered and contains live cultures. In contrast, ambient kombucha is often pasteurised or heavily filtered to extend shelf life, which removes beneficial bacteria.
MOMO also stands out for its bold flavours and eye-catching packaging, making it both appealing and distinctive on the shelf. Beyond this, MOMO is certified organic by the Soil Association as well certified B Corp.
